Metodo Classico Spumante Extra Brut La Perla constitutes a refined and fresh sparkling wine, an ideal representation of a "Metodo Classico di montagna." Marco Triacca is the figure behind the Valtellina-based winery La Perla: its elegant and typical bottles have made it one of the area's outstanding wineries. This label bears the same name as the winery, chosen because of the assonance between "La Perla" and "perlage," that set of bubbles with varied characteristics found in the sparkling wine glass.
La Perla Spumante Metodo Classico Extra Brut is derived from only Pignola Valtellinese grapes vinified in white. Harvesting is done by hand in crates and the grapes are immediately crushed and destemmed. The resulting must is then cooled and subjected to the technique of hyperoxidation, an oenological practice that involves injecting air into the must for the purpose of oxidizing and removing the most reactive compounds, thus achieving greater stability in the finished wine. A cold static decantation is then implemented, which precedes temperature-controlled alcoholic fermentation and subsequent malolactic fermentation. At this point the sparkling wine base is placed in the bottle for frothing in accordance with the Metodo Classico, with at least 24 months of aging on the lees. At the end of this period, disgorgement and subsequent Extra Brut dosage, in the range of 2-2.5 g/l residual sugars, is carried out.
Spumante di Valtellina La Perla Metodo Classico Extra Brut possesses a bright straw yellow hue. Fine and articulate on the nose, defined by floral scents meeting aromas of dried fruit and honey. Balanced and harmonious on the palate, fresh and fruity, with remarkable persistence.
