Bavencoff
In the heart of Burgundy, in Beaune, is the winery led by Yvan Bavencoff, an experienced oenologist and deep connoisseur of the territory. The winery was founded in 2003 by a group of young winemakers, united by the goal of enhancing the potential of Burgundy's denominations in the international market as well. Covering an area of 18 hectares, the company works vineyards distributed in the most suitable areas of the region: Côte de Nuits, Côte de Beaune, and Côte Chalonnaise. The grapes come from prestigious denominations such as Bourgogne AOC, Meursault, Morey-Saint-Denis, and Pernand-Vergelesses Premier Cru. Today, the project bears the name of Bavencoff, which embodies tradition and vision, merging respect for the territory with a contemporary approach to production.
The work in the vineyard is based on a strong focus on sustainability and craftsmanship, with the aim of best expressing the character of the Burgundy terroirs. The soils, composed mainly of clay, limestone, and marl, contribute to giving structure and complexity to the wines. The cultivated grape varieties are those that symbolize Burgundy: Pinot Noir and Chardonnay, accompanied to a lesser extent by Gamay. The vines, with an average age of 40 years, produce high-quality grapes, carefully selected for each cuvée. The winemaking techniques respect tradition, with targeted and non-invasive interventions, to preserve the expressiveness of the fruit and the finesse of the territory. The goal is to create elegant wines that are recognizable and consistent with the Burgundian typicity, enhancing the differences between the individual parcels and denominations.
