Se compone de un perfil aromático fragante, ligado a notas de fruta roja fresca, frutos del bosque y matorral mediterráneo. Negroamaro from Cantine Paololeo represents a pure interpretation of the principal grape variety of Salento and is among the labels dedicated to the varietal line: single varieties vinified in their authentic expression, to enhance their most immediate typicities.
Paolo Leo vinifies the Negroamaro grapes that come from vineyards located in the heart of the Salento territory in the province of Brindisi, in a rural plain that extends between the centers of San Donaci, the site of the winery, and Salice Salentino. In a climate that is specifically Mediterranean, with often scorching summers and always mild winters, the practically zero altitudes allow complete freedom to the marine influences of the Adriatic to the east and the Ionian to the west. The clayey matrix of the medium-textured soils is widely mixed with limestone rock, and the vines find a home with a planting density of about 5,000 plants per hectare. The manual harvest is organized at the moment of perfect ripeness of the fruits and is usually carried out in the cool hours of the early morning.
In the winery, the bunches are destemmed and crushed, and the alcoholic fermentation takes place in steel tanks at a controlled temperature of 24 °C, with maceration on the skins for about 10 days and periodic pump-overs. The malo-lactic fermentation completes the fermentation processes, and the wine can continue to mature in steel tanks for 5 months.Negroamaro from Cantine Paololeo has an intense ruby red color, with youthful violet reflections. The nose has a soft and fruity impact, all focused on the aromas of ripe red pulp, jammy currants and raspberries, with hints of plum and sour cherry, finishing with nuances of Mediterranean scrub. The palate offers a pleasant volume, balanced between the firm tannic structure and the pronounced freshness, while the persistent finish lingers with spicy notes of pepper and cinnamon. An immediate and aromatic Negroamaro that pairs excellently with braised dishes and pasta with ragù, medium-aged cheeses, and slightly spicy cured meats.
