La Passerina de Santa Barbara es una interpretación clara y decidida de esta variedad típica del territorio marchigiano. Se vinifica solo en tanques de acero para presentar en nariz notas frescas y nítidas de fruta madura, flores de campo, hierbas aromáticas con matices salinos de fondo. El trago es ágil y ligero, una combinación perfecta de frescura y salinidad, con una agradable longitud floral.

The Passerina Santa Barbara is a wine with a slim sip, which presents a pleasant harmony between the base structure and the fresh component that lingers on the palate, from which an interesting touch of minerality also emerges. A young bottle, made only in steel, which is recommended to be drunk now to fully enjoy its juiciness and crunchiness. It is precisely thanks to this evident smoothness that it is a label that is always a pleasure to find on the table, where it accompanies various recipes of Mediterranean cuisine. 

This Passerina Santa Barbara comes from vineyards located about 200 meters above sea level, facing north and west. We are within a terroir characterized by a medium-textured clayey subsoil, where the vines grow using the spurred cordon system. After manual harvesting, the bunches are destemmed and the selected grapes are sent for soft pressing. The must obtained from this operation ferments in stainless steel tanks, where the temperature is kept under control. The production process concludes with a quick steel, lasting four months, at the end of which the wine is ready to be bottled.

The white Passerina Santa Barbara presents itself to the eye with a straw yellow color, crossed by streaks more tending towards greenish. The well-ripened fruit develops on the nose with clarity, bringing with it hints of aromatic herbs and floral touches, while in the finish a delightful salty echo is felt. On the palate, it is slim-bodied and drinkable, characterized by a fresh and savory taste; it ends with a finish marked by a floral flavor. The umpteenth gem that comes from the volcanic mind of Stefano Antonucci, eager with this bottle to restore luster to an indigenous varietal from the Marche.
