Odyssée
In the heart of the Côte des Blancs, in Avize, the Odyssée project was born in 2010, founded by Ferdinand Ruelle in collaboration with Olivier Bonville, heir of the famous Domaine Frank Bonville. This winery represents a true enological adventure: a physical and symbolic journey through the 319 villages of Champagne, aimed at gathering the multiple nuances of the region and bringing them back to their original essence. Avize is not only the starting point but also the compass that guides every production choice. Here, in a village of chalk and light, Chardonnay is celebrated in all its luminous finesse, interpreted according to a vision that blends memory and experimentation. Odyssée is a tribute to the most authentic Champagne, a narrative that enriches with every stop, returning in the glass a story that is always new and surprising.
In the vineyard and in the cellar, Odyssée's philosophy is empirical, sustainable, and deeply respectful of the environment. The agricultural approach looks to experimental organic, without ideological rigidity, favoring observation and constant dialogue with the territory. The Blanc de Blancs are vinified in Avize, in a cuverie housed in ancient stables, and often fermented in wood, with indigenous yeasts, to enhance every nuance of the terroir. The parcels come from Avize and its surroundings, including vineyards rented from the Bonville family and other local winemakers. The winery is also distinguished by its work of careful microvinification, where each parcel is treated individually to enhance its unique characteristics. This meticulous care is reflected in the permanent collection made up of five cuvées, each capable of returning a different face of the same village.
Alongside the fixed cuvées, Odyssée proposes each year a “travel” bottle, called Odyssée 319, the result of exploring the different crus of Champagne. This is a curious, unprecedented cuvée, born from the comparison with other winemakers and the desire to tell the extraordinary diversity of this region. The bottles rest in an underground gallery in Avize, a suggestive space that symbolizes the beginning of every new crossing.
