MonteToro
Montetoro is the wine project launched by the Spanish bodega Ramón Ramos, seeking the perfect blend of tradition and innovation to create great wines within the Denominación de Origen of Toro, located in the region of Castile and León. Behind this project lies the experience of three generations of wine producers who animate the Ramón Ramos estate, founded in 1963 in the small municipality of Venialbo, in the province of Zamora. That was the year when Ramón Ramos inherited his father's viticultural legacy, starting to produce and sell wine independently. In the following decades, the winery underwent continuous growth, which took it from selling wine at local markets to trading its labels worldwide. Today, the old underground cellar, dating back to the distant 13th century, has been turned into a museum and hosts wine tours, while the winemaking and aging processes take place in a modern and cutting-edge facility.
In the 60 hectares of vineyards owned by the Ramón Ramos estate, which give rise among others to the Montetoro selection, the traditional varieties Malvasia Castellana and especially Tinta de Toro, a local clone of Tempranillo, are grown as bush vines. The plants are quite old, with an age ranging from 20 to 60 years, although there are also pre-phylloxera vines over 100 years old. The soils are very poor, sandy in nature and characterized by an abundant presence of stones, factors that contribute to the naturally low yield of grapes per hectare in the vineyards. The harvest is done by hand in boxes with careful selection of the bunches, which are then transferred to the winery where the fermentations take place mostly in temperature-controlled stainless steel tanks. The subsequent aging periods can take place either in steel or in French or American oak barriques, depending on the wine in question.
